The lemon sauce is ideal to drizzle the fish when serving or in little dipping bowls on the side.
Fogdog batter of choice (Beer batter or tempura).
4 fish fillets of choice patted dry
2 tablespoons butter, chilled
2 tablespoons lemon juice
1 teaspoon minced garlic
1 tablespoon chopped fresh (or 1 teaspoon dry) dill
Salt and white pepper to taste
Melt butter with garlic in warm (not hot!) pan or small pot. Add lemon juice, salt and pepper to the butter and stir, warming briefly over medium heat, 2-3 minutes.
Remove from heat and add dill and stir through.
Batter and cook fish as per Fogdog packet directions, drain battered fillets on paper towels and serve with choice of salad, sides with sauce drizzled over fish or on the side in a dipping bowl.
