Fogdog Gluten Free Breadcrumbs
Salad of your choice
If your chicken breast is thick like it usually is, cut chicken into thinner slices so it cooks faster when frying.
Don't use too much rice flour - flour your chicken or pat it dry.
Dip chicken into a bowl of beaten eggs.
Make a bed of breadcrumbs and crumb both sides.
Heat a small amount of oil (I use rice bran) and cook until golden brown and crispy on either side.
The Gluten Free Breadcrumbs allow chicken to hold its moisture and have a moist, juicy inside and crisp and crunchy outside.
Serve with salad/fries.
