Sweet and juicy, these delicious blueberry and honey fritters are perfect for breakfast, brunch or dessert!
INGREDIENTS (makes 5-6)
- 95g Fogdog Gluten Free Fantastic Fritter Mix
- 160ml water
- 1 cup blueberries (fresh or frozen)
- 1 Tbsp runny honey
- Butter or margarine for cooking
- Whipped cream, honey and more blueberries for serving
INSTRUCTIONS
- In a medium-sized bowl, add half a packet (95g) of Fogdog Fantastic Fritter Mix and 160ml water. Whisk until it’s thick and smooth.
- Add the blueberries and runny honey to the batter, then mix well.
- Heat a non-stick pan over medium-high heat and add 1 Tbsp butter.
- Scoop spoonfuls of the batter mixture into the pan and fry on each side for 2-3 minutes.
- Serve with your toppings of choice and enjoy!
