Gluten Free Courgette Fritters

Light and tasty, crispy and golden. Perfect little vegetable pancakes that are great eaten both hot off the pan or cold on a picnic.

INGREDIENTS

INSTRUCTIONS

  1. Grate a courgette, salt it and let it sit for 10 minutes.
  2. Drain the excess moisture out of the courgette by squeezing.
  3. Dice an onion and grate cheese.
  4. Mix all your ingredients into a bowl.
  5. In a separate bowl, mix about 3 tablespoon's Fantastic Fritter mix with enough water to form a creamy consistency.
  6. Combine both bowl's together to make your fritter mix ready to fry.
  7. Heat oil in a fry pan (about 3 cm deep) until very hot.
  8. Dollop spoonfuls of the fritter mix until cooked through and golden brown. Enjoy!
