This crispy, flavour packed Double Kentucky Style Chicken is gluten free and super tasty. Double Fogdog = double delicious!
Ingredients
FOR THE CHICKEN
- 6 Chicken thighs
- 1 Packet Fogdog Gluten Free Kentucky Style Coating Mix
- 1 Packet Fogdog Premium Gluten Free Breadcrumbs
- 2 Eggs
- Oil
- Salt and Pepper
FOR THE RANCH STYLE DIP
- 1/3 Cup Plain Yoghurt
- 1/3 Cup Mayo
- 2 Tsp Lemon Juice
- 1 Tsp Garlic Powder
- Chopped Fresh Chives
- Salt and Pepper to Taste
Method
- Preheat oven to 180 fan and line a baking tray.
- Prepare your ranch style dip and set aside.
- Place a good amount of the Kentucky coating mix on a plate. Add your chicken thighs one by one making sure each thigh is well coated in the seasoning. Set aside.
- On a separate plate add good amount of your gluten free breadcrumbs then add your eggs to a bowl with some salt and pepper and whisk.
- Dip the seasoned chicken thighs in the egg first then the breadcrumbs making sure they are well coated. Continue this process till all are done.
- Add some oil to a pan on medium heat. Cook your chicken till golden then place on the lined baking tray.
- Place in the oven to finish cooking for a further 7-10 mins
- Serve with the dip and a side of coleslaw. Enjoy!
