Spring's finally showing up in the produce aisle, and these fritters make the most of it. Made with our Gluten Free Fantastic Fritter Mix, they come together in minutes – crisp and golden, with fresh peas, spring onion and refreshing mint. The miso mayo brings a savoury, tangy and rich depth. Serve warm with mint and spring onion scattered on top.
Ingredients (makes 6-8 fritters)
Fritters:
- 150g Fogdog Gluten Free Fantastic Fritter Mix
- 240ml water
- 1 cup fresh or frozen peas
- 3 spring onions, finely sliced
- 1/4 cup fresh mint, chopped
- Salt and pepper, to taste
- Oil for frying
- Extra mint and spring onion to garnish
Miso Mayo:
- 1 tbsp miso paste
- 1 tbsp hot water, to loosen
- 1/2 cup mayonnaise
- 1 tsp rice vinegar
- 1/2 tsp sesame oil
Method
- Make the miso mayo: stir miso paste together with the hot water to loosen it. Then stir in the mayonnaise, rice vinegar and sesame oil until smooth and fully mixed. Set aside.
- Make the fritter batter: whisk the Fantastic Fritter Mix with the water until smooth and free of lumps. Let it sit for a couple of minutes to thicken slightly.
- Fold in the peas, spring onion and mint. Season with salt and pepper.
- Heat a shallow layer of oil in a non-stick pan over medium heat. Two heaped tablespoons of the mixture per fritter, flattening slightly, and cook for 2–3 minutes per side until golden and cooked through.
- Drain briefly on paper towels. Serve warm with the miso mayo spooned over or on the side. Garnish with mint and spring onion.
Notes: Great as a light lunch, brunch, or a starter for a spring gathering. For a heartier plate, top with a soft-poached egg.
